Dinner can sometimes feel like a puzzle with missing pieces. Between taking care of baby and taking care of work and just trying to keep everyone fed and happy, a complicated recipe just isn’t in the cards. That’s why I’m obsessed with this Easy One-Pan Andouille Stir-Fry. It’s incredibly flavorful, hearty enough for the whole family, and the best part? Minimal cleanup. We’re talking one pan, one glorious pan!

This dish really shines for dinner because it’s quick, but it doesn’t skimp on flavor. It’s a lifesaver on those nights when you walk in the door at 6 PM, everyone’s hungry, and you need something delicious on the table fast.

The foundation of this stir-fry starts with a large pan (my trusty non-stick always gets the call here) and 2 tablespoons of extra virgin olive oil. Once it’s shimmering over medium heat, I toss in the stars of the show: one red pepper, one orange pepper, and a yellow onion, all cut into nice, chunky 1/2-inch slices. The vibrant colors alone make this dish so appealing! I let them sauté for about 5 to 10 minutes, stirring occasionally, until they’re softened but still have a little bite to them. I like a bit of texture in my veggies, but you can cook them longer if you prefer them softer.

Once the peppers and onions are looking good, I add the aromatics and seasonings: 1/2 teaspoon of salt, 1/2 teaspoon of black pepper, and 2 cloves of minced garlic. Oh, that garlic smell when it hits the pan for just another minute! It instantly makes the kitchen smell amazing and promises a delicious meal ahead.

Now for the hero ingredient that really brings the “wow” factor: andouille sausage. I use just one link, halved lengthwise and then sliced into 1/2-inch pieces. The beauty of andouille is its fantastic smoky flavor and a hint of spice, which permeates the entire dish. If your family likes it a little more mild then a kielbasa sausage will do just fine! I add the sausage to the pan with the vegetables and let it cook for another 2 minutes. This warms the sausage through and allows all those wonderful flavors to meld together, while the peppers and onions finish softening up to perfection.

That’s it! Dinner is pretty much ready. The entire cooking process, from start to finish, is shockingly fast, which is exactly what I need on a busy weeknight. Once everything is hot and cooked through, I serve it up. My family loves this over rice, but it’s equally fantastic over Cantonese noodles if you’re in the mood for something different. Sometimes I even just eat it on its own or with some cauliflower rice for a lower-carb option.

This Easy One-Pan Andouille Stir-Fry is proof that you don’t need a million ingredients or hours in the kitchen to create a meal that’s both satisfying and full of flavor.   1. In a large pan over medium-heat, add olive oil and warm until shimmering. Add peppers and onions and sauté until slightly softened around the edges but still has some crisp, about 5 to 7 minutes

  2. Add salt, black pepper, and garlic. Saute another 1 minute.
  3. Add andouille sausage to the pan. Cook for another 2 minutes or until the sausage is warmed through and peppers/onions are fully softened.

  4. Serve over rice, Cantonese noodles, or cauliflower rice as desired.
