Finish by stirring in shredded chicken and spinach.

Instructions

  1. Place a large stock pot on the stove at medium-high heat. Add olive oil, diced celery, diced onions, and diced carrots.Saute for 5-7 minutes or until the carrots have started to soften. Add garlic. Saute for another 30 seconds.
  2. Add water, better than bouillon chicken base, parmesan wedge heel, and the seasonings (oregano, rosemary, thyme, basil, smoked paprika, and pepper).
  3. Increase the heat and bring broth to a boil.
  4. Add noodles to the pot and cook just until noodles are barely tender. Do not overcook the noodles. They will continue to cook when you remove the pot from the stovetop.
  5. After you remove the pot from the stovetop, add shredded chicken, spinach, and additional salt to taste if desired. Let set until warmed through.

    Serve with French bread and shredded parmesan if desired.

  6. Store leftovers in an airtight container in the refrigerator for 4-5 days, depending on the freshness of the chicken you used.

Note

Freezing Instructions: 

 If you are preparing this soup specifically to freeze, undercook the noodles to prevent them from getting too mushy when you reheat them.

Cool the soup completely then store in a freezer safe container for up to 2-3 months. 

Reheating Instructions:

For best results, thaw the soup in the refrigerator for about 24 hours before reheating. Once thawed, reheat on the stove over medium heat until warmed through.
